VINCENNES, Ind. (WTWO/WAWV) — A food truck company known for shaved ice, sweet treats, and specialty coffee-based drinks will be getting a brick-and-mortar location in Vincennes in the coming months.

Coconut Jo’s, who have long had a truck in the Vincennes Marshalls parking lot, said they plan to hold their grand opening sometime in June. Cody and Whitney Drake own the company which currently operates multiple food trucks in the Vincennes and Washington area.

The new location will be on 6th Street in Vincennes, taking over a building that at one time housed a putt-putt golf business, a pork tenderloin restaurant, and then a vape shop.

According to co-owner Cody Drake, the Java Jo’s truck which specializes in coffee, drinks, and pastries, is located in the area of Vincennes near Marshalls five days a week. The new brick-and-mortar location will offer the same items as well as having the Coconut Jo’s shaved ice truck stationed outside.

Co-owner Whitney Drake explained that the company is undergoing a slight re-branding as the move to the building takes place. According to Whitney, the shaved ice offerings of Coconut Jo’s will be available on a limited schedule from the truck parked at the new brick-and-mortar location, while the building itself will offer the Java Jo’s menu along with added offerings like hand-mixed Italian sodas and some food items as well.

Whitney and Cody began their business in the summer of 2020, in the midst of the COVID-19 pandemic, when a front yard lemonade stand run by their three children sparked the idea of a shaved ice food truck. Purchasing their first truck for $700, Cody and Whitney quickly found success in parking lots around Washington, Indiana. By the summer of 2021, the coffee-based Java Jo’s items were introduced into the menu and the couple purchased a second truck as they began to operate in Vincennes.

Cody said they hope to hold a grand opening sometime in June but are currently working on some repairs to the building and awaiting the arrival of equipment that has been delayed due to shipping issues.

Cody said both the drive-thru coffee truck and the brick-and-mortar location will remain in operation following the grand opening.
