Elote Corn Salad Recipe
Sweet Corn, Off the Cob
5 CUPS Boiled in salt water & roasted until charred
Cilantro, Fresh: 3/4CUPS Rough Chop
Cotija Cheese: 1 1/2CUPS Grated
Chili Powder: 2 TABLESPOONS
Lime Wedge: 6 EACH
Salt & Pepper TO TASTE
Salad- Chill charred corn until cold. Combine with cilantro and cotija cheese. Season with salt and pepper.
Sour Cream 2 CUPS
Heavy Cream 1/2 CUPS
Lime Juice 2 EACH Juice from two limes
Lime Zest 2 EACH Zest from two limes
Lime Crema- Combine sour cream, heavy cream, lime juice, and lime zest. Chill.
Drizzle with lime crema and sprinkle with chili powder. Garnish with a lime wedge and serve chilled.
