Corn Flake Crusted French Toast w. Frozen Berry Compote & Maple Syrup

2 cups corn flakes, crusted
8 pieces of soft bread, preferably Texas toast
2 cups milk
2 egg, whisked
1/4 cup sugar
Pinch salt
Pinch cinnamon
1 tsp vanilla
2 tsp baking powder
Vegetable oil for pan frying
2 cups frozen berries
1/2 cup sugar

For compote: Combine berries and sugar in a small pot over low heat until berry juice is slightly thickened, stirring recently

Heat vegetable oil over medium heat.
Whisk eggs, milk, sugar, salt, cinnamon, vanilla flour and baking powder until combined.
Dredge bread in batter, then in crushed corn flakes.
Pan fry both sides 2-3 minutes until golden brown.
Garnish with berry compote, maple syrup, powdered sugar.

Seven Can Chicken Chili

1 can chicken broth
1 can diced tomatoes
1 can black beans
1 can kidney or garbanzo beans
1 can cooked chicken
1 can sweet corn
1 can enchilada sauce
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp black pepper

Combine all ingredients in a slow cooker on high for 2 hours or low for 4.
Garnish with cilantro, sour cream, cheddar.
