What You'll Need:

3 slices bacon, chopped
1/2 cup chopped celery
1/3 cup chopped onion
1 cup chicken broth
1 (15-ounce) can black-eyed peas, undrained
1 (6.2-ounce) package quick long-grain rice, seasoning packet included
1/2 teaspoon dried thyme

lWhat To Do:

In a large saucepan over medium-high heat, cook bacon until crisp, stirring often. Add celery and onion; cook 4 to 5 minutes, or until vegetables are tender, stirring constantly. Stir in chicken broth and peas; bring to a boil. Cover, reduce heat, and simmer 5 minutes. Stir in rice and thyme. Remove from heat; cover and let stand 5 to 7 minutes, or until liquid is absorbed and rice is tender.
