Clabber Girl Recipe - Mahi Mahi Tomato/Olive Topping


Baked Mahi Mahi
1 C. sliced cherry or grape tomatoes
1 C. black or green olives
2 TBSP olive oil
dash salt
dash pepper
1 TBSP lemon juice
chopped chives for garnish

Bake fish and set aside.  In saucepan, heat olive oil.  Add sliced tomatoes and olives and heat until warm, no need to thoroughly cook.  Add dash of salt and pepper and lemon juice.  Allow to be warm and simply ladle over the baked fish and garnish with chopped chives.
