Real Nutritious Living Two Bean Chili

  Two Bean Chili
2 tsp coconut oil
1 red onion
2 c sweet potatoes
4 chopped garlic cloves
collard greens-chopped
1 tsp. cumin
1 T chili powder
1/4 tsp oregano
1 can diced tomatoes
1 can rinsed black beans
1/4 tsp sea salt

Heat oil, add onion potato, garlic, salt Cook 8-10 minutes. Add collard greens then cool 1-2 minutes
until bright green

Stir in chili powder,cumin and oregano.Stir in tomatoes and beans/ simmer for 10 minutes.Let cook several hours.

Optional toppings:Chives, Daiya cheese, fresh chopped red onion, tortilla strips
