Coconut Pecan Pancakes

1c AP Flour

2tbs sugar

2tsp CG Baking Powder

1/2tsp salt

1c whole milk

1tbs melted butter

1 egg

1/2c toasted coconut

1/2c toasted pecan

Whisk flour, sugar, baking powder and salt in medium bowl.

In separate bowl, whisk milk, butter and egg.Add wet mix to dry mix and gently blend. DON'T OVERMIX! Stir in coconut and pecans,

Heat lg. skillet, lightly grease. Ladle 1/4 cup of batter onto pan. When bubbles break (approx1-2 min) turn over. Cook 1 min longer.
